Food Safety Prerequisite Programmes
When establishing a food safety management system prerequisite programmes should be in place to control the work environment. Structures should be constructed of durable materials and be easy to maintain and clean. Walls and floors should be made of impervious materials with no toxic effect. Floors should be constructed to allow adequate drainage. Ceilings and overhead fixtures should be constructed to minimise the build up of dirt and the shedding of particles. Equipment should be easily cleaned, maintained and facilitate good hygiene practices. Appropriate facilities and food safety management system procedures should be in place to ensure that cleaning and maintenance are adequate and an appropriate degree of personal hygiene is maintained.
